I hear you're improving, and I'm sure glad of that news. I was so sorry to hear about your stroke, especially coming on the ____ trail, since I know how much you love to _____. I'm thinking good thoughts for you and hoping you'll soon be able to be out _____ing again.

I'd cut out "especially coming on the ____ trail, since I know how much you love to _____" and leave the rest. Then send!

I think it's awesome--when I had thyroid surgery several years ago, I really appreciated short notes b/c anything longer made my head hurt! I'm sure your friend will appreciate hearing from you.
I would put in more words and fewer fill-in-the-blanks :)
